Simple Healthy Dinner Recipe

Here is a dinner I made last night and it will only take you about 10 minutes to make…and it tastes good.

This recipe is healthy, low glycemic, gluten free, dairy free, all kinds of free….while still getting your protein and veggies. Woohoo!

Question for you…do ever feel like you just don’t want to spend a lot of time in the kitchen preparing dinner? I felt that way last night, I was a little tired and just wanted something quick and simple that still tasted good while still keeping to my nutrition plan. Yes it’s possible!!

Curry Lentil Soup with Veggies

1 carrot

1 handful cauliflower

1 handful of string beans

2 cups water

3/4 cup curry lentil soup mix

1/4 cup frozen pre-cooked quinoa & kale

Add the 2 cups water and veggies (cleaned and cut) to pot. Bring water to a boil. Then add the lentil soup mix & frozen quinoa and kale  and cook for 5 minutes.

Dinner is done!

I keep this lentil soup mix around so I am prepared when I need to make a simple healthy dinner. It is all natural, no msg, no preservatives….only contains pre-cooked lentils, curry spice, onion, garlic and salt. Click here if you want to check it out.
